Characterization and determination of probiotic properties of lactic acid bacteria isolated from the different regions of India.lactic acid, exopolysaccharide production and cholesterol reduction. According to bergey?s manual and with the resultsobtained from biochemical test this microorganism was tentatively identified as Lactobacillusdelbrueckii. All strains show different characteristics like exopolysaccharide production,cholesterol reduction, tolerance towards bile salt, acids. It was found that PSSI has highesttolerance for the NaCl and bile and PSSII are the most viable for the acid. PSSII has the maximum cholesterol assimilation power which means it reduces the maximum cholesterol. The two strains has the maximum phenol concentration and antioxidant activity.
