Meat sector is receiving greater attention in recent years in India due to awareness of importance of meat and good export environment. The exciting meat processing and product processing system are not satisfactory. Traditional slaughter practices are followed without proper concern for the animals and poultry and slaughter and dressing operation carried out on the open ground. Carcasses are exposed to heavy contamination with dung and soil. Application of modern scientific methods for processing of meat in modern processing units would provide safety, value addition, and convenience and consumer satisfaction. Abattoir is a modern facility for humane slaughter and dressing of food animals. Dissemination of abattoir technologies is essential for production of wholesome meat and developing trained manpower in the meat sector.
