Rice (Oryza sativa L.) is an important staple food crop of the world. Rice is most extensively investigated crop from the research point of view but still there is a lot of scope to improve the specific traits. The micronutrients content like iron (Fe) and zinc (Zn) and protein content major considerations. The lack of micronutrients like Fe and Zn in staple food crops is a wide spread nutrition and health problem in most of the developing countries. It has been realized that the development of varieties with dense micronutrient content helps us to eliminate the malnutrition, through biofortification of rice which enhances the bioavailability of these micronutrients in rice grain. This book gives comprehensive information about the genetic variation exists in the germplasm lines and landraces of rice for micronutrient and protein content. It also provides information on the process of selecting the superior genotypes, which are stable in performance for these traits across the environment and seasons. This information is of great use to the breeders and researchers who are willing to work on the genetic improvement of rice for quality traits and breeding for the better nutrition.
