This book tackles for the first time the protective effect of lentils , as a common leguminous Mediterranean food,against one of the most common types of neoplasms in the world, the colorectal cancer. The authors tried in their research to elaborate the nutraceutical effect of lentils against early and late carcinogenesis in Fischer 344 rats. Different biomarkers have been used to explicit this protective effect, including histopathological and biochemical ones. This book comes as a part of the international effort to find and explore those functional and therapeutic foods that could be helpful in the struggle and fighting in the battle against cancer, one of the most dangerous and fatal diseases in the world.
