Zingiber officinale of family zingiberaceae is one of the important medicinal spice in the world. There are plenty of volatile and non-volatile compounds are present in it. Among these compunds oleoresins are showa pungent nature. Present work deals with study on antioxidant compund 6 - gingerol. Attempts have been made to collect and assess the 6-gingerol content from across the India. Mutation breeding was done in Selected ginger cultivar and that to be assessed at biochemical level. Tissue cultural work callus induction and micropropagation was achieved in ginger. The callus and Microporpagated plats have been also analysed for pungent compound 6-gingerol. So this peace of work will be helpful for the student at P. G. Level and research student at doctorate level who are working on spices or specifically ginger.
