I grew up eating Cajun food. I never truly appreciated the cuisine until I moved away from home and found myself without. After learning to cook my favorite foods, I realized the recipes tend to be a little greasy, overly complicated, and sometimes difficult. The enclosed dishes are untraditional takes on the cajun classics. These recipes have been tested dozens of times until the taste is perfect; but they are a little easier, a little healthier, a little tastier, and a lot more fun. Enjoy!
